We keep pedigree Middle White and Berkshire pigs - both premium pork producers. The Middle White, once known as the 'London Porker' is much favoured by chefs for its superb meat and crackling. The Berkshire, the oldest recorded breed, is highly prized both here and in Japan, where its delicately flavoured meat commands a high price.

The Gloucester Old Spot and Saddleback complete the Oakleaze Herd. Known as dual purpose breeds, they both produce excellent pork along with perfect bacon and gammon. We like to use their long hams for our home produced Air Dried Ham as well as our Salami and Chorizo.
