| Where our food comes from, and how it is produced, is important to us. The Oakleaze Herd was born out of our own need to know how the meat we eat is produced - along with a real concern for the welfare of the animal it has come from. The truly free range life style enjoyed by our contented and stress free pigs shows in the quality of their meat... Bacon that doesn’t shrink, however you cook it, sausages that are always perfect, and fresh joints that not only look like proper meat, but taste like it too! Our sausages are made using 95% rare breed pork, seasoned with organic herbs and spices. We use our own wild garlic and chives in the spring, or apples from our orchard during the autumn, to produce a sausage unique to Oakleaze. The casings are always natural. All of the sausage recipes have been created by us; we never buy in pre-mixed seasonings. Our packs contain 6 generously filled preservative free sausages. We offer a select range of what we hope to be an inviting and slightly different sausage, with seasonal specials and new flavours being created all the time. Home made patés, traditional west country faggots, as well as French crepeinettes are available to order. Fresh Pork - We offer a full range of fresh meat, prepared by a master butcher. Lean diced leg, ideal for a quick mid-week stir fry; or if you are after something a little special, try our boned and rolled loin, a crust of fennel seeds and fresh lemon thyme - roast in the oven... amazing! Or choose a beautiful roasting joint and enjoy the best crackling you have ever tasted. Bacon and Gammon - Locally dry cured... and simply wonderful! We offer green and smoked back, streaky and middle cut bacon. Pancetta for pasta and pizza dishes, or pan fried until crisp, then scattered over a salad... perfect! Gammon steaks to whole gammon joints - ideal for a family party, Christmas or Easter - the choice is yours. |
